Part 1: Let’s talk Thermomix with Tenina!
Everyone knows Tenina Holder simply by her first name — and that’s because in Australia, the name “Tenina” is synonymous with “Thermomix”. Since leaving the position of recipe developer at Thermomix Australia in July, Tenina has heaped some fresh new ideas on top of an already full plate of projects. What a good time to meet the famous Tenina and find out more! I decided to make contact. Despite being extremely nervous, I hoped to share this experience with fans of the super kitchen machine and Tenina graciously allowed our first Skype call to be recorded. (Thanks Tenina, it was fun!)

Hi Hélène — This was very interesting. I had never visited Tenina’s blog and now I have discovered the umami paste and dulse (I had never even seen the word before). I ordered some and will be designing my own umami paste (less tomatoes, more maitake).
Aside from that, I was quite fascinated by your accent. I had imagined you were a Quebec francophone and now I don’t think so. Your English sounds native but certainly not like Québec English (at least not Montréal area English).

Great to hear from you again Esther! I love that you will be tweaking and making your own umami, based on Tenina’s inspiration. I made (and tweaked) her umami recipe and am embarrassed to say it didn’t last long. I almost ate it straight from the jar, but not quite…. I ended up scooping it with corn chips. Very naughty. If you will be using maitake, that will be so interesting!)
As for the accent (or lack thereof…) I did grow up in Quebec. My first languages were German and Quebecois french. I learned English next but it has become my primary language. My French and German are um.. ‘serviceable’ but not truly fluent now, as I almost never have occasion to practice with either. Thanks for stopping by and taking time to leave a note Esther :)

For two nights on a row now I’ve been dining exclusively on breadsticks with umami paste! It’s a dangerous recipe. Now I always make a double batch -it goes away too quickly- I haven’t been so addicted to a recipe since Helene’s thai soup from this blog. Have been playing around with it too, adding some new ingredients in the mix (yay) and tweaking it to adapt it to my pantry and just for fun. So, thank you so much for the recipe, Tenina!
Oh thank goodness, it’s not just me! I’m so glad to learn that I’m not the only one with a secret addiction to Tenina’s Umami paste. I had to stop making it because I kept eating it from the jar on crackers! I have intentions to play with it too Mara… I have a couple of ideas rolling around in my head and that is why I have not blogged about it yet… (I was waiting to share my tweaked version on this blog, rather than the original one). Nice to know the umami paste is in the mix at your house too :-)
