What to do with leftover Risotto?
Speaking on behalf of frugal cooks everywhere, let me shout out loud that I love leftovers!
Some of us are so frugal that we arrange for leftovers when planning the week’s menu. By creating two meals from one recipe we save time, money and energy.
Always happy for leftover Thermomix Pizza Risotto I usually put it into a glass pan where it will solidify nicely in the fridge. Flavours continue to meld as it cools and leftover risotto takes on a more more substantial, even more satisfying consistency. Just a little bit goes a long way with this popular comfort food.
When cold it is easy to slice and works well as a brunch element. Augment sliced Risotto with whatever your fancy (or pantry) provides. How about a dollop of Thermomix Yogurt and slices of fresh for fried tomato? Or consider serving searing leftover risotto slices with garlic and chives to serve with poached eggs and Thermomix Hollandaise Sauce…

What a great idea! I discovered that i am the only one in my house that LOVES risotto, and I can’t eat that much! I am sure that this will fly!
Sue, if you have risotto leftovers often you could also try doing arancini. I don’t know if you’re familiar with those but, in case you aren’t, they’re a sort of rice croquettes. Great for dinner with a salad or a good appetizer to feed more people. I even like them cold but you can just reheat them quickly in the oven before eating, so they’re good for potlucks or occasions when you want to have do-ahead stuff.
